Homemade French Toast Sticks

Ingredients:
8 slices white Texas Toast bread
5 eggs
1 C heavy whipping cream
2 T milk
1 T vanilla extract
1 T sugar
2 tsp ground cinnamon
3 T butter
Powdered sugar
Maple syrup

Directions:
Cut each slice of bread into 4 equal strips.  Set aside.  In a large bowl, whisk together eggs, whipping cream, milk, vanilla, sugar and cinnamon.  In a large saucepan over medium heat, melt butter.  After butter is melted, dip each piece of bread in egg mixture, let excess drip off and place in saucepan.  Don’t place too many pieces of bread in the pan so it is overcrowded.  Once one side is golden brown, flip over and cook the other side until golden brown and crispy on the outside.  Sprinkle with powdered sugar and serve with maple syrup. Mini German Pancakes

Ingredients:
6 eggs
1 cup milk (you can use skim or low fat milk if you want)
1 cup flour 1/4 tsp salt

Toppings: Powdered sugar and lemon juice, or maple syrup

Directions:
Preheat oven to 425. Spray cupcake pans with no-stick cooking spray. Mix eggs, milk, flour and salt just enough to blend. (Do not over mix. Batter will be lumpy.) Pour batter in cupcake pans. Makes approx. 12-16 mini German pancakes. Bake 18-25 minutes depending on type of cupcake pan and the amount of batter in each cupcake tin. Remove from oven. Let cool for just a minute or two. Remove mini pancakes from pan. Drizzle with lemon juice and sprinkle with powdered sugar. You can also serve with maple syrup if you prefer instead of using lemon juice. Enjoy for breakfast, lunch or dinner!

Serbian Quiche

(This was served at our 2014 Stake Women’s Conference. It's quickly becoming one of our family favorites!)   


6 eggs, beaten
1 cup milk
1 lb. small curd cottage cheese
1 cup Bisquick
1 lb. cheese, grated
1 cube butter, melted
1 cup chopped ham (optional)

Mix all together. Bake in 9x13 pan at 350° for approx.45 minutes or until golden brown. Test for doneness. This is a very versatile dish.You can change the cheese, add bacon bits or sausage, leave the meat out, add different herbs, the combinations are endless.

Blender Pancakes

1 1/4 C water
1 C whole wheat kernels
1/4 C nonfat dry milk (optional)
1 egg
2 T margarine or oil
1 T honey or sugar
1/4-1/2 t salt
1 T baking powder

In blender, mix water, wheat kernels, and dry milk on high for 3 minutes.  Add margarine, honey, egg, and salt.  Blend for 20 seconds. Add baking powder.  Pulse 3 times, just enough to mix.  Mixture should foam up and get very light.  Cook immediately on a hot nonstick griddle.

Tip: Skim milk may be used instead of the water and nonfat dry milk.  Batter also makes delicious waffles.
