1 ½ lbs chicken tenderloins (about 8)
½ tsp salt
¼ tsp pepper
½ cup honey
¼ cup soy sauce
¼ cup chopped onion
⅛ cup (2 T) Ketchup
1 T canola oil
1 clove garlic, minced
½ tsp minced ginger or ¼ tsp ground ginger
¼ tsp red pepper flakes
Place chicken in the crock pot, combine remaining ingredients and pour over chicken. Cook on high for 3 hours or low for 4-5 hours. Shred chicken, return to crock pot and toss with sauce. Serve over rice.
